Setting up a new food truck and the flooring situation is giving me a headache

Never thought I'd spend this much time researching what goes under my feet in a tiny kitchen on wheels but here we are lol. The municipality inspection is in three weeks and I still haven't sorted out the floor situation, they're pretty strict about having a non slip surface that can handle oil spills and constant cleaning without turning into a skating rink. Been talking to a couple other food truck owners in Abu Dhabi and one guy recommended I look for a Premium Vehicle Pallets supplier in Dubai because apparently the stuff he got from some random industrial area shop started delaminating after like four months. Found this company called Crateco that seems to specialize in exactly this kind of thing but I'm torn between going with something lightweight since every kilo matters for fuel economy versus something heavy duty that'll last through the abuse of a dinner rush. Also wondering if these pallets are easy to cut to fit around the wheel arches and odd corners or do they need to be ordered pre-sized and I just have to deal with whatever gaps remain?
