Kesar Peda and Badam Halwa for Festive Sweet Trays

Two sweets bring saffron and nuts to the festive table in different ways. This collection of royal kesar sweets includes soft kesar peda for sharing and rich badam halwa for serving warm.
For peda, cook mawa gently until fragrant, then mix in sugar, cardamom and saffron-infused milk. Shape the mixture into small discs while it is still warm. Crushed pistachios make a simple garnish.
Badam halwa begins with soaked almonds ground into a paste. Cook the paste slowly with ghee, sugar and cardamom, stirring often so it develops flavour without burning. Add the infused kesar so its golden colour spreads evenly.
