Understanding How to Use Tej Patta can improve the aroma of many everyday Indian dishes. The dried whole leaf works best when given enough cooking time to release its flavour gradually.

For biryani and pulao, Tej Patta for Biryani can be used alongside cloves, green cardamom, cumin and cinnamon. Heat oil or ghee and add one or two leaves for around 15–20 seconds before adding the remaining ingredients. This creates an aromatic foundation for the rice.
