Ingredients
For the batter

1 cup besan (chickpea flour)

1 cup vegan curd

2 cups water

¾ tsp green chilli paste

¾ tsp ginger paste

Salt to taste
For tempering

1¼ tsp mustard seeds

¾ tsp cumin seeds

¼ tsp asafoetida
-
2 green chillies
-
Curry leaves
-
2 tsp red chilli powder
-
Fresh coriander
-
Grated coconut
Method

Mix vegan curd, water, and besan until smooth.

Add ginger paste, chilli paste, and salt.

Cook over medium heat while stirring continuously.

Once the mixture thickens, spread it immediately into thin layers on plates.

Allow it to cool slightly.

Cut into long strips and gently roll each strip.

Prepare the tempering by roasting mustard seeds, cumin, curry leaves, green chillies, and asafoetida.

Pour the tempering over the rolls.

Garnish with coriander and grated coconut.
