How to Keep Indian Masalas Fresh in the Kitchen

Indian masalas are essential for everyday cooking, but their flavour can gradually weaken when they are stored incorrectly. Heat, moisture, air and sunlight are the main factors that affect spice aroma.
Learning how to keep spices fresh starts with choosing the right location. Instead of keeping spice jars beside the stove, place them inside a cool, dry and closed kitchen cabinet.
Airtight containers are useful for protecting both whole and ground spices. Transfer opened packets into clean jars and make sure the lids close firmly.
Whole spices such as jeera, dhaniya, cloves and cardamom can be stored intact and ground in small quantities when required. This can help preserve their aroma because the natural oils remain protected until the spice is crushed or heated.
For ground masalas, careful masala storage is even more important. Avoid using wet spoons or leaving jars open while cooking. Steam from a hot kadhai can introduce moisture and cause powders to clump.
A practical kitchen system is to keep a small quantity of frequently used spices in the daily masala dabba and store the remaining stock separately. Refill the dabba regularly rather than keeping the entire supply exposed to kitchen conditions.
Buying smaller quantities can also be useful if you cook infrequently. Large packets may remain unused for months and gradually lose aroma.
Check your spices every few months. Rub a pinch between your fingers and smell it. Strong aroma usually means the spice is still performing well, while a weak or dusty smell indicates fading flavour.
