Making Kolkata-style Club Kachori at home gets easier when you watch the dough, oil and sabzi consistency.
Avoid adding too much water while kneading. The dough should be firm and pliable, not sticky. Give it time to rest because the sooji continues to absorb moisture. When rolling, keep the discs slightly thick; very thin discs may not puff as expected.
The frying oil should be moderately hot. If it is too hot, the outside can brown before the kachori cooks through. If it is too cool, the dough may absorb excess oil. Fry a small test piece first and adjust the heat before cooking the whole batch.
Keep the potato-pumpkin sabzi thin and warm while frying. Serve the kachoris soon after draining them, without covering them while hot, to enjoy their crisp texture.
